Ingredients:
- 30g Double Cream

20g Butter

15g FibreX Cereal – available from http://lowcarbzone.com.au/yvs500/default.asp or ordered through a health food store

4g Prunes
-
1g Sultanas

Water
-
Artificial sweetener – saccharin or sodium cyclamate
Method:
- Soak FibreX cereal in 15ml of water for about 5 minutes. Cereal will swell up and soften.
- Place prunes, sultanas and butter into food processor and process until butter is light and fluffy and prunes/sultanas are pureed through butter.
- Add all other ingredients (except the cream) including any water left in the bowl with the Fibre X cereal. Add sweetener to taste, I use 2 or 3 drops
- Process for a further minute until well combined.
- Gently stir in the cream at the end.
- Store in the fridge.
- Before serving, microwave for a maximum of 15 seconds (or the cereal will melt and become oily), stir really well and serve. Otherwise allow cereal to return to room temperature before consuming. Cereal sets very hard.
The cereal smells and tastes a little like raw cake mix.
This cereal is a 4:1 ratio and contains 373 calories, 5.3g protein, 37.2g fat and 4.1g carbohydrate
